Hiden Tama Gaeshi
Literally “secret ball reversal,” this technique uses the brewery’s own junmai kasu–tori shōchū in lieu of plain alcohol. It’s said to restore (返す) the purity of “tamasake” (water‑diluted sake), showcasing their proprietary spirit‑infusion skill.

Tasting Notes
On the nose, gentle vanilla aromas give way to a rich, cream‑like sweetness on the palate—think whipped cream melting into every sip. With acidity, bitterness and astringency all restrained, the flavor rails straight to a clean, satisfying finish.

Brewery Heritage
Founded in 1615 by the Takagi family in Murayama, Yamagata, Takagi Shuzō benefits from pristine mountain water.
